Spring-cleaning, I found mom’s handwritten recipe books. What treasured memories they brought back. I had to share.

Custard biscuits

Baking with my 5-year-old god daughter Kenya Grace.

60g Custard powder

60g Icing sugar

180g Flour

180g Butter

  • Preheat oven to 180 degree Celsius

  • Cream butter and icing sugar

  • Sift custard powder and flour

  • Mix together

  • Roll into walnut size balls

  • Place 3” apart on a baking tray

  • Flatten with a fork, dipped in flour

  • Bake for 15-20 minutes

Crunchies

450g Butter

2 ½ Cups sugar

2 Eggs

2 Cups flour

1 ½ Cups coconut

3 Cups rice crispies

1 Heaped teaspoon bicarb

2 Cups oats

  • Preheat oven to 180 degree Celsius

  • Cream butter and sugar

  • Add eggs

  • Combine dry ingredients

  • Mix together

  • Shape into balls the size of a teaspoon

  • Flatten with a fork

  • Place on greased baking tray

  • Bake for 15 minutes
